Bacon Cheeseburger Salad

There are a ton of different ways to make this, so feel free to try your own variations and mix up the condiments. (I don't always make this the same way myself...)

  • 2 burger patties (cut into twelve slices)
  • 4 slices of bacon (torn into twelve pieces)
  • 12 pickles
  • about 1 head of romaine lettuce, chopped up
  • 1/3 cup of shredded cheese (or to taste)
  • condiments, such as low-sugar ketchup, mustard, mayonaise, and diced onions

Cook the burgers and the bacon. I typically just fry the burgers in a pan and heat some pre-cooked bacon in the microwave (since that's easiest), but do whatever you like (such as BBQing the burgers). I also like to tear up each slice of bacon into 3rds before it is heated.

    While things are cooking:

Cover a plate with the chopped up lettuce. I like romaine, and I tend to use about a head's worth (or so). Choose your favorite.

Sprinkle the lettuce with shredded cheese, such as colby/jack, cheddar, or whatever. Alternately, feel free to cook a slice of cheese onto each burger patty (especially if BBQing).

Mix up your favorite burger sauce. For me, this is usually a "secret sauce" recipe that combines (low-sugar) ketchup, mayo, and mustard with some diced onions. I don't ever measure it, but if I had to guess, I probably combine about 4 tsps of ketchup, 2 tsps of mayo, and 1 tsp of mustard. I then sprinkle in some diced onions (about 1/2 to 1 tsp) and mix it well. I don't tend to make a lot of sauce, since for me (for this salad) its purpose is to just to accent the burgers, not drench the lettuce.

When the burgers are done, cut each one into 6 slices (pizza-slice style). Dip the slices into the sauce (both front and back). Top each slice with a 3rd of a slice of bacon and a pickle. Put the completed burger slice onto the salad.

That's it! Enjoy the great taste of a bacon cheeseburger with a lot fewer carbs.
